The Joys (And Confusions) of Baking: Part 1

The joy is a fresh baked loaf of bread. The confusion lies in the process. The math, the methods, the madness. But the entire package is as addicting as coffee. Thus, I have delved into the world of baking. It has even found a home in my nightly dreams. Currently, I am studying the science of baking. The math and calculations have my brains twisted in a mire. 

Sourdough is the my current battle. I want to perfect my loaf and be able to create a chewy, crunchy, and pleasantly sour loaf of bread, loaf after loaf. I have baked several loafs and have finally grasped the process. Make the sponge, proof it, make the dough, ferment it, shape the loafs, proof them, slash, and bake. A simple process involving hours. The longer the better the flavor. For me, the process is what I truly enjoy. Meditative and reflective, making bread is therapy.
